Soak 200 gms of flat rice noodles in lukewarm water.Take a pan, add a little oil, stir fry carrots, cabbage, broccoli, baby corn, mushrooms and tofu. Add the Pad Thai Noodles, toss well.
Next add the full bottle of Pad Thai Sauce, a little water and toss well. Finish with bean sprouts, spring onions and toss well. Add chicken and eggs for the non vegetarian version.
Serve hot, topped with crushed peanuts, lemon wedges and chili flakes.
